Mint Matcha Smoothie
I'm not going to lie, this smoothie tasted more like dessert than a meal, and that was a good thing, because I devoured this during a movie night in with my beau. But it would also work for an afternoon treat, and it is actually loaded with good-for-you-things, despite tasting like mint chocolate chip ice cream... :)
1/3 cup cashews, soaked in water for at least 30 minutes and drained
2 cups loosely packed spinach
1 frozen banana
1/4 cup fresh mint leaves
1 tsp vanilla extract
2 tsp matcha powder
1 tsp Bee Pollen (optional)
1-2 scoops protein powder of choice (I used vanilla flavored protein powder)
2-3 cups almond milk or hemp milk (more or less to control consistency)
1 tbsp cacao nibs
Topped with more bee pollen, unsweetened coconut flakes, and a fresh sprig of farmer's market mint. You could also add sesame seeds, extra cacao nibs, chopped almonds, coconut whipped cream... the point is have fun with your smoothies and make something that feels good to you!
